Banana and Cream Cheese Bread

Ingredients:
100g (4 oz) castor sugar
175 (6 oz) cream cheese
25 g (1 oz) butter or margarine
225 g (8 oz) bananas, mashed
2 small eggs, beaten
225g (8 oz) SR flour
milk
Method:
Grease and line a large (1 kg/ 2 lb) loaf tin. Cream together the sugar, cream cheese
And butter or margarine until light and fluffy. Mix in the mashed bananas and the beaten eggs. Stir in the flour, then add sufficient milk to give a moist consistency. Spoon the mixture into the loaf tin.
Bake in moderate oven (180°C/ 350°F, Gas 4) for about 1 hour until firm and risen.
Turn onto wire rack to cool.
