Ingredients:
250g (9 oz) white or brown bread flour.
10ml (2tsp) baking powder
1.25 ml (1/4 tsp) salt
5 ml (1 tsp) cinnamon
125 g(4 oz) soft butter
200g (7oz) caster sugar
2 eggs
4 large, ripe bananas, mashed
65g (2-3 oz) chopped walnuts
few drops vanilla essence
Method:
Sift flour, baking powder, soda, salf and cinnamon together.
Cream the butter and sugar until light. Add the eggs, beating well.
Add flour mixture to creamed mixture alternately with bananas, beating well until smooth. Stir in nuts and vanilla. Pour into lightly oiled and lined 23 x 13 x 7.5 cm (9 x 5 x 3 in) loaf pan. Smooth top with the back of a spoon, then bake at 180 °C (350 °F, gas 4) for 50 – 60 minutes. Turn out, remove paper and cool. Serve sliced and buttered.
