Ingredients
1 cup wholemeal flour
1/2 cup self raising flour
1 teaspoon bicarbonate of soda
1/2 teaspoon baking powder
1/4 teaspoon salt
60g (2 oz) butter
1/4 cup raw sugar
1 egg beaten
1/2 cup of buttermilk
1/2 teaspoon of vanilla
1 cup bran cereal
1 ripe banana diced
Method
Preheat oven to 200°C or 400°F.
Stir dry ingredients into a bowl. In a small saucepan, melt butter, remove from heat, and add sugar, egg and milk. Stir until sugar dissolves. Add vanilla.
Add bran cereal and allow to stand a few minutes until bran softens. Stir this mixture all at once into sifted ingredients, mixing with a fork just enough to moisten the flour. Do not overmix.
Put into a greased loaf pan and bake for 40-45 minutes or until cooked through. Serve warm, buttered.
