Banana Bread Loaf

This recipe is a reliable old favourite 'quick' bread recipe.

Ingredients

9 oz/ 250g white or brown bread flour

2 teaspoons baking powder

1/4 teaspoon bicarbonate of soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

4.5 oz/ 125g soft butter

7 oz/ 200g castor sugar

2 eggs

4 large, ripe bananas, mashed

2 oz/ 60g chopped walnuts

few drops of vanilla essence

Method

Sift flour, baking powder, bicarbonate of soda, salt and cinnamon together.

Cream the butter and sugar until light. Add the eggs one at a time, beating well between additions and adding small amount of flour between each egg. Add flour mixture to creamed mixture alternately with  bananas, beating well until smooth. Stir in nuts and vanilla. Pour the batter into a lightly greased and lined 9 x 5 x 3 inch loaf pan.

Smooth top with back of a spoon dipped into hot water. Bake at 350°F/ 180°C for 50-60 minutes. Turn out, remove paper and cool. Serve sliced and buttered.
