Diabetic Banana Bread

This banana bread uses artificial sweeteners and is ideal not only for diabetics, but also the health conscious.

Ingredients

2 cups self raising flour

2 oz/ 60g margarine

1 egg

1/2 cup milk

3 tablespoons chopped walnuts

3 small mashed bananas

1/4 teaspoon bicarb soda

artificial sweetener

Method

Beat margarine, until creamy. Beat in a little flour, egg and bananas. Sift flour, and bicarbonate soda.

Fold in flour and milk alternately, add artificial sweetener to taste. Spoon into greased loaf tin.

Bake in moderate oven 30-40 minutes.

 

Cut into 16 slices. Each slice = 1 portion carbohydrate, and 1 teaspoon of fat allowance.
