Quick and easy banana bread.
Ingredients
1 1/4 cups Plain flour
3 teaspoons baking powder
1 teaspoon ground cinnamon
1 oz/ 25 g butter
1 egg
4 oz/ 110 g brown sugar
1/4 cups milk
1/2 cup mashed, ripe banana
Method
Preheat oven to 430°F/ 220°C, 390°F/ 200°C for fan forced.
Grease and line a 4.5 inch x 8.5 inch (14cm x 21 cm) loaf pan.
Sift flour and cinnmon into a large bowl, then rub in butter. Stir in sugar, eggs lightly beaten, milk and mashed banana.
Do not overmix the batter, it should still be lumpy.
Spoon into baking pan.
Bake for about 30 minutes. Stand in pan for about 5 minutes before turning onto a wire rack.
Slice and butter, or toast lightly and butter.
